Dr. Jane Pentz, MS, PhD
Dr. Jane began her career in nutrition with an undergraduate degree in nutritional biochemistry from Vassar College while simultaneously raising three children. Her education continued at Tufts University where she received her Masters and Ph.D. degrees in nutritional biochemistry; she is one of only several hundred to ever earn a Ph.D. in Human Nutrition Sciences from the USDA Human Nutrition Research Center on Aging at Tufts University. In addition, Dr. Jane worked with the USDA Human Nutrition Research Center’s team that completed ground breaking research on the effects of weight training in 80 and 90 year olds.
As the former president and CEO of Lifestyle Management Associates, a company dedicated to providing nutrition continuing education courses to professionals, Dr. Jane developed the Nutrition for Professionals course; authored the textbook for the course; and her book, “If You Don’t Take Care of Your Body, Where Are You Going to Live!”, contains the philosophy of healthy eating along with individualized menu plans.
After almost a decade of experience, Dr. Jane became aware of the need for a more formalized, safe and professionally accepted nutrition certification component for fitness professionals. Dr. Jane along with several colleagues founded the American Academy of Sports Dietitians and Nutritionists – www.aasdn.org. AASDN has established the Nutrition Specialist Certification.
In 2011, during a 6 month sabbatical, Dr. Pentz and co-author, Doug Dwyer, published a young adult novel with a purpose. No – Book one of the 8th Day Mystery Series deals with the timeliest of issues – obesity and health related diseases in young children. This first novel of the 8th Day series inspires and motivates young readers to make healthy school lunch choices.
In January 0f 2012, for the first time in 15 years, the USDA issued new guidelines for school meals. These new guidelines double the amounts of fruits and vegetables in school lunches and boost offerings of whole grain-rich foods. The timing of Dr. Pentz’s novel and the new USDA guidelines launched AASDN into a new philanthropic endeavor – the National Childhood Obesity Awareness Initiative (NCOAI). The initiative incorporates a star-associated food rating system through the use of the NCOAI placemats. These colorful, interactive placemats provides a simple yet effective tool for educating, inspiring and motivating children to make healthy school lunch choices.
Greg Salgueiro, MS, RD, LDN

Greg Salgueiro is a Registered and Licensed Dietitian in the State of Rhode Island. Greg began teaching the two-day Nutrition for Professionals course with Dr. Jane in 2008. He also held the position of the Director of Sports Nutrition for Lifestyle Management Associates and currently is the AASDN-BOC Program Director. Greg has experience in corporate, as well as hospital based, fitness and wellness programming. In the past he has been called upon to lecture on Sports Nutrition and Weight Management for the United States Coast Guard Academy. Greg has performed Sports Nutrition workshops for Division I Collegiate athletic teams and works with local high school and college athletes to help them fuel their bodies for optimal athletic performance. Greg is also certified through the Cooper Institute as a Health Promotion Director and through Totally Coached as an Intrinsic Coach. Greg is an ACSM Certified Health Fitness Specialist, an ACSM Certified Advanced Personal Trainer, and possesses a B.S. in Nutritional Sciences from Cornell University. Greg completed his Dietetic Internship at the Bronx VA Medical Center while simultaneously completing his M.S. in Clinical Nutrition at New York University. He also received advanced training at the Human Performance Institute in the Power of Full Engagement and works with clients to optimize human performance through energy management. Greg currently works full-time as the Manager of the Lifestyle Medicine Center and the Women’s Medicine Collaborative for Lifespan.
Michael McElveen, MS, RCRSP, CSCS

Michael McElveen holds a bachelors of science in health science and a master of science in sports medicine. Michael has been instructing the two-day Nutrition for Professionals course with Dr. Jane since July 2011. Michael has experience working in a variety of settings including hospitals, other non-profit organizations and in the private setting. For the last eleven years, Michael has worked full time in higher education. He currently serves as the director of recreation at Berry College. He is an active member of the NSCA and NIRSA, currently serving on the editorial board for the Recreational Sports Journal, NIRSA’s scholarly publication.Michael’s other credentials include: NSCA’s certified strength and conditioning specialist, AASDN’s nutrition specialist, NASM’s performance enhancement specialist, FCB’s certified tobacco treatment specialist and is a certified instructor through the American Red Cross.
Deawna Alfonsi, BA, AASDN SNC
Deawna Alfonsi holds a Bachelor of Arts Degree in Education and a veteran in the fitness industry since 1997. She holds various certifications such as AASDN Nutrition Specialist Instructor, AFAA Certified Personal Trainer, ACE Group Fitness Instructor and Reiki ART Practitioner along with a plethora of specialty certifications for a myriad of group fitness formats ranging from cardio dance formats to cardio kickboxing to yoga and everything in between. She is the owner of D-Fit by Deawna through which she formerly had a Fitness & Wellness Studio located in Pittsburgh, PA. Through Bally Total Fitness she had ranked #1 in the nation for her success at running their Total Results Group Weight Loss program. This experience combined with what she had learned as an AASDN Nutrition Specialist led to her to create the Project “Jumpstart!:” Lose up to 16 pounds in 8 weeks Program. She has competed in various natural physique competitions and has been awarded various trophies in the Bikini, Fitness Model and Figure divisions. Her own personal weight loss journey along with her passion for fitness, health and wellness has led her to teach, coach and train hundreds of students to create a lifestyle that not only leads to results in their personal body transformations, but does it in a way that is optimally healthy, sound and permanent. Samantha Husted, MS

Samantha Husted holds a Bachelor of Arts in Health and Exercise Science and a Master of Science in Health Promotion. She has over 7 years of experience in the fitness and wellness field.
Samantha currently serves as the Assistant Fitness and Wellness Director at Embry Riddle Aeronautical University in Daytona Beach, Florida. She holds various certifications including AASDN Nutrition Specialist Instructor, ACE Personal Trainer, AFAA Group Exercise Instructor, American Red Cross Lifeguard Instructor, Les Mills BODYPUMP and BODYCOMBAT and YogaFit.
Joseph F. Reza, RD, CPT-NCSF, CHC, CPT-NFPT

Joseph has been a Medical Nutrition Therapist for 25 years working with patients as a Nutrition support Clinical Dietitian in various hospitals in Southern California. He is currently working as a consultant RD in Long Term Care, Skilled Nursing Facilities and Rehab Centers; he Has 13 years experience as an accomplished healthcare sales and marketing specialist. For over 25 years, Joseph has been coaching various class formats, currently he is Group Exercise Certified, teaching Indoor Cycling and Les Mills Body Pump classes.
Joseph has been a sports nutrition presenter since 1989, starting as a corporate gym employee educating over 200 personal trainers with the goal of keeping gym personal trainers current with sports nutrition education. Joseph currently works with clients primarily focusing on the elderly population with some type of medical nutrition therapy need and is a presenter for the Nutrition Specialist Certification program.
Chris Seldomridge, BS, ATC, NASM

Chris Seldomridge, an avid sports enthusiast, has been involved in sports since the age of 5 learning to play a variety of sports, with ice hockey and tennis being the favorite. As Chris grew and had opportunities in other sports, he realized athletics would be his vocation and attended Temple University and earned his Bachelor of Science degree in Physical Education with concentration in athletic training and sports management.
Chris has been a healthcare professional for the last 12 years as an athletic trainer, performance enhancement specialist through NASM for 10 years, an AASDN- nutrition specialist for the last six years, nutrition specialist instructor for AASDN the last four months, certified ergonomics assessment specialist for the last two years, and an AHA instructor for the last 13 years. He has been working with adolescents, parents, coaches, and administration to assist in the education of sports and prevention of sports injuries at the junior high and high school levels for the majority of his career.
As he continues to mature himself, he realizes there are more than athletes to help educate; anyone who is physically active will benefit with a well-rounded healthcare professional and is devoted to helping others find their passion in the healthcare profession.
Stefani Whiteside, BS

As a certified Personal Trainer and Wellness Coach for over 13 years, Stefani has helped numerous clients get in shape and improve their overall nutrition and wellness. She’s held national certifications through The American Council on Exercise (ACE), the Aerobics and Fitness Association of America (AFAA) and Madd Dog Athletics (Spinning).
She’s worked with various national and private health clubs, and is currently working one-on-one with clients to help them meet their fitness, nutrition, and wellness goals. As a substitute PE teacher with the Los Angeles Unified School District, Stefani also gets a chance to teach the importance of fitness and nutrition to today’s youth.

Lucinda is a graduate of Montclair State University where she received her BS in Nutrition and Food Science with a concentration in dietetics and was chosen out of thousands of applicants to complete her dietetic internship in New York City where she focused on Medical Nutrition Therapy and Community Nutrition. Soon after becoming a dietitian, Lucinda graduated from Muhlenberg School of Nursing and holds a license as a Registered Nurse in the State of NJ. She has practiced at various NJ and NYC hospitals and completed clinical work in areas such as critical care, pediatrics, diabetes, oncology, geriatrics, and numerous medical surgical units. Lucinda designed and managed the GO RED heart health awareness events and created the new pediatric diabetic menu at Staten Island University Hospital. She is also a W.I.T.S. Certified Personal Trainer since 2001 and currently works for W.I.T.S. as a Practical Test Evaluator to instruct and assess the practical skills of student fitness trainers. Lucinda has been chosen by her previous instructors to become the Nutrition Educator at Muhlenberg Nursing School Summer Camp for high school senior students who aspire to attend nursing school. For the past four years, she has attended the summer camp and instructed students on nursing-related nutritional topics while developing intriguing learning activities to engage the students, which has been a major success for students. She was also a Nutrition Educator for the Rutgers Cooperative Extension of Union County where she developed lesson plans for NJ Expanded Food and Nutrition Program. Lucinda has also been a Nutrition Educator for the Union County Division on Aging where she has created lessons for the Congregate Meal Program emphasizing principles directed towards the elderly population in relation to health and wellness. Lucinda also holds certification from the New Jersey State Board of Education where she works as a substitute nurse throughout the district and works with students grades pre-k-12. She has recently been accepted to Kean University Graduate School and is working on her Masters Degree in Community Nursing and School Nurse Certificate. She holds various other certifications including AASDN Nutrition Specialist Certification, Zumba Licensed Instructor, Group Exercise Instructor and is American Red Cross CPR Certified and loves to volunteer with any additional time she has. She is extremely passionate and skillful in her work and her goal is to change the lives of others, improve eating habits, increase physical activity of all ages and it all begins with education.
